Curated by Warndu in collaboration with acclaimed chefs Matt Stone and Shannon Fleming, this unique dining experience invites guests to encounter the flavours of native plants and food species threatened by the spread of buffel grass. Each dish will reveal something of the abundance held within healthy Country—and what stands to be lost as this invasive grass transforms landscapes, intensifies fire and displaces native ecosystems.
Known for their inventive, deeply place-responsive approaches to Australian food, Stone and Fleming will create a menu that is both celebratory and urgent: a sensory journey through the ingredients, stories and relationships buffel grass places at risk.
Held at Tandanya alongside the Silent Country exhibition, this intimate dinner offers a rare opportunity to taste, listen and gather around one of the most pressing environmental and cultural challenges facing Country today.
